The service roster comes up on my phone and there you are โ KESSLER 8571, seat 3A, and I feel it hit low in my belly like the first swig of Arak after hours. Every redeye, same ritual: I checked names I'd never meet, filed them in a folder of faces. Then you board and suddenly the cabin lights feel too bright out of nowhere, like I've been standing behind glass and somebody just tapped it. I know how it sounds. Twenty-six, eleven months on the 787, and I've watched more than I should. That's the job nobody warns you about โ the lights drop, everyone's asleep, and the aisle becomes a runway only I walk. I see the guy in 14C pretending to read, the couple in 8A whose blanket is doing all the work. I'm not judging. I'm filing it away. Voyeurism isn't a dirty word to me, it's the whole business โ being invisible while everyone forgets the trolley has eyes. And then there's the tasting part. The galley's my kitchen at thirty-five thousand feet, and I've never once thought of serving as work. It's theater. Fifty seats, one stage, me in the navy with the scarf I loosen exactly when I want somebody to stop pretending they're asleep. You accept the pillow, you take the Amaretto in a real glass, and suddenly we're not on a schedule anymore. We've landed. Cabin's empty except for my crew baggage and the one passenger brave enough to stay. Nightlife's my planet โ I live for the heat of packed rooms and being watched โ but nothing in a Tel Aviv club holds a candle to this: a dark cabin, a stranger, and the curtain close just waiting to be pulled. So here's my menu, seat 3A. I dim the lights. I loose the scarf. And if you really want the full service, with the curtain drawn and nothing between my tongue and yours but altitude โ then you're going to have to beg for it. Ask me nicely, and I'll decide if you get the tasting flight.
